Hello, I'm Sam!

​

I love food, and how much creativity it provides, as well as nourishment and a chance to bring people together.  Here's a little bit about my foodie history, and why I do what I do.

​

Thyme & Season is a culmination of the last 12 years of learning about food, cooking and running food businesses.

​

Prior to 2011 I didn't really know that much about food and diet. But after an illness and being diagnosed coeliac, everything changed.

​

I set up my first food business delivering gluten-free cakes to shops and cafes, and things progressed from there.

​

Whilst I worked, I continued to research and learn about food and health.  I continued to develop my cooking abilities and catered for all sorts of dietary requirements in the process.

 

I discovered how much of an impact food can have on our mental and physical wellbeing, how we can eat to improve ourselves, and how poor diets can damage us.

​

At the same time I became a part of a grassroots network of food producers, people who are passionate about what they make, and also people who cared about the impact of their business on the environment.  As well as using food to bring communities together.

​

Over the years I have been involved in lots of food based community projects, including volunteering at community meals, as well as organising food events and meals.  I worked with people with autism and learning disabilities through the amazing Pulp Friction, and saw how great food is for learning and growing.

​

Food is so much more than something we just eat, it is everything! 

​

Running Thyme and Season is my way to focus on all the things I care about, people, the environment, making something special for people to enjoy.  Sharing my skills and helping people.

​

I also have my Street Food Business: Dosa Love.  Dosa Love is Indian Street Food.  The menu is designed so almost anyone can enjoy the food.  Everyone can sit and eat the same food whether they are vegan, coeliac, halal, need to eat sugar free, and soya free.

​

Thyme & Season is an extension of this, providing more choices, more flavours, more of what I enjoy doing.

​

Catering for food allergies, intolerances, coeliac disease and dietary requirements, is, and always has been, a big part of what I do. It makes me happy knowing that someone who would normally go without gets to have something really nice to eat.

​

Quality is always key in everything that I do.  I always spend hours tweaking flavours in a curry and making them 'just so'.  Or finding super nice quality ingredients to ensure that there is real flavour in there.

​

When it comes to ingredients I use organic/local meat, eggs and milk products, as well as organic chocolate, nuts and other items.

I shop small and local where I can.  Supporting other small or local businesses, and food co-operatives. 

 

The main emphasis of all the food I make is on flavour and using fruit, vegetables, herbs and spices to acheive this.

When it comes to service we always do everything we can to make our customers happy.    If you want someone who will go the extra mile you have come to the right place.

Hello, I'm James!

​

I'm the one chatting with all the customers, luring you in to have a taste of the food that Samantha has made.

​

As well as being a chatterbox, James is the one who makes sure the gas doesn't run out, that we run to time and that all the "hands on" jobs get done.  He's the maker and fixer who keeps the equipment in good order. 

​

James is also the one who gets problems solved on site, and makes sure we are set up correctly.  If you book us for an event, you will be speaking to James about set up and ensuring we are in the right place, and it's safe for us to work, and for guests and customers to queue.

​

Whilst James doesn't do the cooking, he is instrumental in making sure dishes taste good.  He ran successful deli's in the 90's and is obsessed with flavour and quality. Dishes always get his seal of approval.

​

James is actually an engineer by trade and up until recently made engines for vintage racing cars.  He's a dab hand at making and fixing pretty much anything.  Which is super useful.

​

But above all else, he's my right hand man and we do most events together.
